Abstract
Les Mongols se présentent comme un peuple d’éleveurs nomades et se définissent comme des mangeurs de viande. Toujours est-il que des farineux revêtent le caractère très particulier, autant dire vital, de support de bonheur jusque-là réservé à la viande : ce sont des gâteaux-semelle confectionnés en grand nombre pour la fête du nouvel an lunaire par tous les foyers. Chaque visiteur reçoit en gage d’hospitalité un gâteau-semelle qu’il rapporte à la maison. Ce gâteau garantit du bonheur à l’hôte qui l’offre et au visiteur qui l’emporte. L’anthropologie des techniques et de l’alimentation permet d’étudier, à partir des techniques de confection, des pratiques de distribution et de consommation d’une pâtisserie, le transfert déconcertant sur ces gâteaux du support matériel de bonheur qu’était la viande. L’article fait apparaître que les modalités de partage d’une pâtisserie marquent l’évolution de l’organisation sociale de la société mongole.
An odd soleshoe-shaped pastry: the new support of happiness of Buddhist halh Mongolians.Mongolian people present themselves as a nomadic herder people and as meat eaters. The fact remains that farinaceous foods take on a very particular nature, almost vital, and become a kind of support of happiness so far reserved to meat: soleshoe-cakes are made in large quantities for the lunar New Year feast in every household. Each visitor receives a soleshoe-cake as a token of hospitality and takes it home. This cake guarantees happiness to both host and visitor. The anthropology of techniques and food allows to study, from analyzing the techniques of confection and practices of distribution and consumption of this pastry, the disconcerting transfer from meat to these cakes as a material support of happiness. This article points out that the modalities of sharing the pastry reveal the evolution of Mongolian society social organization.
